Meal Planning:

Monday: Meatless Monday - Black bean and cheese tex mex pizza 
Crust

3 cups flour
1 tsp. salt
1/3 cup vegetable oil
1 cup warm water

Combine all the flour, salt, vegetable oil, and water until it forms a dough.
Roll the dough into a big ball. Pat the dough flat with your hands or take a rolling pin and roll into a large circle.
Put the dough on a flat pan into the oven and let the sides cook until there are little brown specks on both sides like you would see on tortillas.

Topping: 
1/2 chopped onion
1 can black beans 
1 cup (or less) Honey BBQ Sauce 
2 cups grated cheddar cheese



Tuesday: Honey soy glazed chicken

Honey-Soy Glazed Chicken

Serves 4
Ingredients
            1/2 cup honey
            2 tablespoons soy sauce
            2 skinless chicken breasts(about 3 pounds total)
            coarse salt and ground pepper
Directions
Preheat oven to 475 degrees. Line a shallow roasting pan or 9-by-13-inch baking dish with aluminum foil. In a large bowl, mix together honey, soy sauce, and 1/3 cup water. Add chicken, and toss to coat; season with salt and pepper. Transfer chicken and honey mixture to prepared roasting pan.
Bake chicken, basting with juices from edges of pan every 10 minutes, until well browned and an instant-read thermometer inserted into thickest part of drumstick (avoiding bone) registers 165 degrees, 30 to 40 minutes. Serve chicken drizzled with pan juices.



Wednesday: Roasted marinated pork loin 

Roasted Marinated Pork Tenderloin

Makes 8 servings; 5 oz. each
Ingredients:
         2 (1 lb. each) pork tenderloins
         1/2 C apple juice
         1/4 C dijon mustard
         1/4 C chopped fresh rosemary
         8 cloves garlic, minced
         3/4 tsp. ground pepper
Instructions:
1) In a bowl, combine all ingredients except the pork to create the marinade.
2) Put raw pork and marinade mixture in a large ziplock bag; refrigerate at least 30 minutes (or overnight, if you want) to let flavor set.
3) Preheat oven to 350 degrees. Spray a baking dish with non-stick cooking spray and pour pork and marinade into the dish. 


4) Bake, uncovered, until an instant read thermometer reaches 160 degrees (about 40–45 minutes). Let stand for 10 minutes before slicing. Enjoy!
