Farfalle with Spinach and Mushrooms Recipe
Last night, I needed a quick dinner for the hubby and I. It had to be healthy but, I also knew it had to be filling. This recipe calls for some things like: BUTTER! that didn't really fulfill my definition of healthy.
I ended up using fresh mushrooms, olive oil, frozen chopped spinach, and a small yellow onion. I also used Thyme! (I've never cooked with it before but, it seemed to come out well!) Instead of Farfalle, I used the thin spaghetti we had in the cupboard. We topped it with light shredded mozarella and grated parmesan! It was quick, tasty, cheap, and healthy!
